Peanut butter and chocolate together in one bar cookie. What could be better? This bars are delcious and very easy to make. These bar cookies get rave reviews! I did not use all the chocolate frosting that the recipe makes, I thought it would be too much. Enjoy!
Chocolate Peanut Butter Bars
1 cup butter, softened
1 1/2 cup packed brown sugar
1 cup sugar
2 1/2 cups creamy peanut butter, divided
1 egg
1 1/2 tsp. vanilla
2 1/2 cups quick cook oats
2 cups flour
1 tsp. baking soda
1/2 tsp. salt
Cream butter and suagrs until smooth. Add 1 cup of peanut butter, egg and vanilla. Mix well. Combine oats, flour, baking soda & salt; add to creamed mixture. Spread into a greased 15x10x1 pan (I used two 8x8 pans). Bake at 350 degrees for 13 -- 17 minutes. Cool slightly, about 12 minutes. Spread with remaining peanut butter. Cool completely then frost with chocoloate frosting (recipe follows).

6 Tbsp. butter, softened
4 cups powdered sugar
1/2 cup cocoa
1 tsp. vanilla
6 to 8 Tbsp. milk
In mixing bowl, combine the butter, powdered sugar, cocoa, vanilla and enough milk for spreading consistency. Spoon over peanut butter layer then spread. Cut into bars.
